Ingredients:
- 1 large can of sardines
- 5 shallots, thinly sliced
- 3 garlic cloves, thinly sliced
- 5 red chili peppers, diagonally sliced
- 2 stalks of lemongrass, bruised
- 3 kaffir lime leaves
- 2 bay leaves
- 2 tomatoes, chopped
- 200 ml water
- Salt and seasoning powder to taste
- 3 tbsp cooking oil
Instructions:
- Heat oil, sauté shallots, garlic, and chilies until fragrant.
- Add lemongrass, lime leaves, bay leaves, and tomatoes. Stir briefly.
- Pour in sardines with its sauce, add water.
- Season with salt and seasoning powder to taste.
- Simmer until the sauce thickens and flavors meld together.
- Serve hot with steamed rice.
Tips:
- Add bird's eye chili for extra heat.
- Fresh pineapple chunks go great in this dish too.
