Minang-Style Sardines Recipe

Ingredients:

  • 1 large can of sardines
  • 5 shallots, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 5 red chili peppers, diagonally sliced
  • 2 stalks of lemongrass, bruised
  • 3 kaffir lime leaves
  • 2 bay leaves
  • 2 tomatoes, chopped
  • 200 ml water
  • Salt and seasoning powder to taste
  • 3 tbsp cooking oil

Instructions:

  1. Heat oil, sauté shallots, garlic, and chilies until fragrant.
  2. Add lemongrass, lime leaves, bay leaves, and tomatoes. Stir briefly.
  3. Pour in sardines with its sauce, add water.
  4. Season with salt and seasoning powder to taste.
  5. Simmer until the sauce thickens and flavors meld together.
  6. Serve hot with steamed rice.

Tips:

  • Add bird's eye chili for extra heat.
  • Fresh pineapple chunks go great in this dish too.
