Ingredients for Restaurant-Style Fried Rice

Main Ingredients:

  • 2 servings of cold cooked rice (preferably stored overnight for the best texture)

  • 2 eggs

  • 100 grams of chicken fillet, diced

  • 50 grams of peeled shrimp (optional)

  • 2 cloves of garlic, finely chopped

  • 3 shallots, finely chopped

  • 2 tablespoons sweet soy sauce (kecap manis)

  • 1 tablespoon soy sauce

  • 1 tablespoon oyster sauce

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground black pepper

  • 1/2 teaspoon chicken bouillon powder (optional)

  • 2 tablespoons cooking oil

  • 1 stalk green onion, thinly sliced

  • Crackers and pickles for garnish

How to Make Restaurant-Style Fried Rice

1. Use Cold Rice for the Best Results

Cold rice has a firmer texture, preventing clumping and creating a perfectly cooked fried rice dish.

2. Sauté the Aromatics

Heat oil in a large wok or pan over medium heat. Sauté the garlic and shallots until fragrant and slightly golden brown.

3. Cook the Chicken and Shrimp

Add the diced chicken and shrimp to the pan. Stir-fry until fully cooked and aromatic.

4. Scramble the Eggs

Push the ingredients to the side of the wok, then crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix with the chicken and shrimp.

5. Add the Rice and Seasonings

Add the cold rice to the wok, followed by sweet soy sauce, soy sauce, oyster sauce, salt, and black pepper. Stir well until all the ingredients are evenly mixed.

6. Add Green Onions for Freshness

Stir in the sliced green onions and mix until evenly distributed.

7. Serve with Garnishes

Transfer the fried rice to a plate and serve with crackers, pickles, and cucumber slices for extra flavor and texture.
